Ingredients: Italino Millet Upma
1. Ginger – small piece
2. Onion – 1 small size
3. Garlic – 4 / 5 pods
4. Green chillies – 3
5. Milk – 1 cup
6. Little Millet – 1/ 2 Cup
7. Red Millet – 2 tbsp. soaked
8. Rice Ravai – 1/2 cup – take raw rice n use mixer to make ravai out of rice
9. Green moong – 3 tbsp – soaked and sprouted
10. Chesse – 1 tbsp for garnishing.
11. Oil – 2 tbsp
12. Salt as per taste.
13. Water – 1.5 cup
Ingredients : Veggie Salad
1. Onion – 1 Small
2. Zucchini-1 medium size
3. Sweet corn – 1/ 2 cup
4. Capsicum – 1 small
5. Broccoli – few florets
6. Salt – as per taste
7. Crushed pepper- 1 tbsp
8.Italian seasoning – 1 tbsp
Italian seasoning mix- 1tbsp basil, 1tbsp marjoram , 1 tbsp Oregano , 1/2 tbsp rosemary, 1/2 tbsp thyme, 2 tsp red chilli powder, 2 tsp garlic powder, 1/2 tsp salt
9. Oil – 2 tbsp

Ingredients for Italian tomato sauce
1. Tomatoes- 3 ripped
2. Onion- 1 medium sized
3. Garlic – 4/5 pods
4. Chilli – 2
5. Lemon – 1
6. Basil/ Tulasi leaves – 3 leaves
7. Corridor leaves- small bunch.
8. Italian seasoning – 1 tbsp.

Ingredient- Dessert Zabaglione Parfait
1. Ragi Flakes – 3 tbsp
2. Mixed Millet Flakes- 3tbsp -we can use any flakes like red aval, corn flakes. But have used the healthy millets
3. Homemade hung curd thick – 1 cup
3. Strawberry, papaya and Kiwi- cut in small cubes 1 cup – we can use any seasonal fruits
4. Mixed nut chopped – 2 tbsp
5. Honey – 2 tbsp

Preparation – Italino Millet Upma
1. In a pan heat oil, add garlic, ginger, Green chilies and onions finely chopped and sauté.
2. Add milk to it and once it starts boiling, add the Millets and Rice Rava, Sprouts to it.
3. Keep stirring occasionally and make sure lumps are not formed.
4. Once cooked add grated cheese and stir.
5. In a baking tray, drizzle oil and spread millet upma and refrigerate for 10 mins for this mixture to set.
6. Cut the set Millet Upma into pieces and shallow fry both sides- optional only if you want it to be crisp.

Preparation – Veggie Salad
1. Heat oil in a pan, put all the cut vegetables and toss.
2. Add pepper, Italian seasoning, salt and toss.

Preparation for Italian tomato sauce
1. Roughly chop all the ingredients and put it in the blender to make the sauce.

Serve Italiano Upma with sauce and veggie topping.
Garnish with cheese, coriander, and Thyme leaves -optional

Preparation for Dessert – Zabaglione Parfait

1. Set the curd overnight with spoon of sugar. Morning tie it in the muslin cloth to drain water.
2. Blend hung curd, honey and banana to make thick purée
***originally sugar, egg and wine are used, but made it Indianized using hung curd, banana and honey***

In a tall glass layer as follows:
Layer 1: Sweet thick hung curd
Layer 2: Ragi/Mixed millet flakes
Layer 3: Chopped fruits and honey
layer 4: Ragi/Mixed millet Flakes
Layer 5: Sweet thick yogurt
Layer 6: Chopped fruits
Repeat the layers till the glass is full.
Finally decorate with mixed nut pieces and serve. Enjoy the Truely Indian version of authentic Italian Zabaglione dessert.
