Dr. Joe Galati shares a very simple homemade Italian tomato sauce he grew up, handed down through the generations from Sicily. It is very easy to make, with minimal prep time. This is a meat-free recipe. Here are the ingredients for this small batch sauce, which will be good for 1-2 pounds of pasta.
2 cans San Marzano tomatoes
EVOO (about 8 TBS)
4 cloves chopped garlic
Handful fresh basil/ripped
2 TSP salt
2 TSP black pepper
1 TSP oregano
1 TSP sugar
1 TSP spicy Italian herb mix
Directions:
Simmer garlic in EVOO until light brown (do not burn)
Add tomatoes and stir
Add salt/pepper/oregano/herb mix/sugar
Stir and simmer 30-45 minutes
Serve over pasta of your choice
