Ingredients:
-shallot
-garlic
-200g mushroom
-sprout mix
-white wine
-risotto rice
-chicken or vegetable stock
-parmesan cheese

Recipe:
1.Finely dice shallots, and mince garlic. The finer the better, the texture will turn out.
2. Remove mushroom stems, make sure to check for dirt.
3. Bring stock to a boil, it’s important the stock is hot when adding to the rice.
4. Pan on medium heat add oil, cook shallots till translucent. Add garlic and mushrooms. Add butter and salt, to flavor and remove water from mushrooms. Cook till tender, then add sprout mix.
5. Add rice to pan, cooking until slightly clear on edges. Add white wine vinegar and cook off till evaporated.
6. Gradually add the stock, waiting till the liquid is absorbed before adding more.
7.Finish with Parmesan, then taste and adjust seasoning.
