Ingredients for the shortcrust pastry
2 eggs medium size
150 gr of butter
7 gr of salt
50 gr of grated cheese
30 gr of almond flour
25 great of cornstarch
250 gr of plain flour
Finely grated rosemary
Procedure
I place the butter, the eggs and the saltini a bowl and I mix everything together with my hands for a couple of minutes. Now I add all the remaining ingredients and I mix everything well, until I get a smooth and firm dough.
I wrap it in cling film and I let it stay in the fridge for one hour. After that I cut the dough in two pieces of the same weigh, I roll it out with a rolling pin between two sheets of baking paper, I get a 3 mm puff pastry.
I place the star shape on it and I cut it with a Sharp blade, I use a fork to make some little holes on it. I do the same procedure with the other piece of dough, so I obtain two bases.
I let them cook in preheated oven at 180 degrees until it gets golden brown.
Ingredients for the filling:
250 gr of ricotta cheese
175 gr of fresh cream cheese
30 gr of grated cheese
Pepper to taste
Procedure
In a big bowl I place all the ingredients, I beat them with the electric mixer for a couple of minutes.
