WHOLE WHEAT VEG LASAGNA
Ingredients:
For the lasagna sheets-
1 cup wheat flour
¼ cup oil
1 tbsp salt.
For the white sauce-
2 tbsp butter
1 tbsp all-purpose flour
1½ cup milk
For the filling-
1 tbsp butter
4-5 garlic cloves, finely chopped
1 medium sized onion, finely chopped
1 medium sized green capsicum, finely chopped
1 medium sized red capsicum, finely chopped
1 medium sized yellow capsicum, finely chopped
Salt, to taste
½ tsp crushed black pepper
2 large tomatoes, pureed
1 tbsp mixed herbs
½ tsp red chili powder
½ tsp red chili flakes
¼ cup boiled sweet corn
For the assembly-
1 tsp butter
1 cup grated mozzarella cheese
2-3 tbsp mixed herbs
Method:
For the lasagna sheets-
1. In a bowl, take 1 cup whole wheat flour.
2. Add water and knead to form a soft smooth dough.
3. Grease the top with 1 tsp oil and cover and set aside for 20-30mins.
4. Knead once again.
5. Take a portion of the dough and roll into a thin sheet.
6. Cut the edges to form a rectangle sheet.
7. In a pot, take sufficient amount of water.
8. Add 1 tbsp salt and let it come to a boil.
9. Add 1-2 sheets into the boiling water and let it cook for 3-4 mins.
10. Drain the sheet and set aside.
For the white sauce-
1. In a pan, melt 2 tbsp butter.
2. Add 1 tbsp all-purpose flour and let it cook over medium low flame till the raw smell is gone.
3. DO NOT BROWN THE FLOUR.
4. Add 1½ milk in batches. Mix well so that there are no flour lumps.
5. Let it boil over medium heat.
6. Run your finger over the back of the spoon. If the sauce forms a clear runway, it is ready.
7. Set aside.
For the filling-
1. In a pan, melt 1 tbsp butter.
2. Add the finely chopped cloves of garlic and saute.
3. Add 1 finely chopped onion and let it cook.
4. Once the onion turns translucent, add the veggies of your choice (1 finely chopped green, red and yellow capsicum). Mix well.
5. Add salt, to taste and ½ tsp crushed black pepper- mix again.
6. Cover and let it cook for 2-3 mins.
7. DO NOT OVERCOOK THE VEGETABLES.
8. Add the tomato puree and mix.
9. To this add 1 tbsp mixed herbs and ½ tsp each of red chili powder and red chili flakes.
10. Add ¼ cup boiled corn. Mix well.
11. Cover and let it cook for 1-2 mins.
12. Set aside.
For the assembly-
1. To assemble the lasagna, butter the pan.
2. Spread 1 tsp white sauce at the bottom.
3. Over this place some lasagna sheets.
4. Add an even layer of the prepared filling.
5. Over this spread 2-3 tbsp white sauce.
6. Add some grated mozzarella cheese and sprinkle some mixed herbs.
7. Repeat the layers.
8. Bake in a pre-heated oven at 180⁰C for 10-12mins.
9. Serve hot!
