Spinach Rice in Vegetable Paprika:
Spinach Rice in Vegetable Paprika, also known as Spanakoriza, is a North Italian dish with combines two of the most essential ingredients of the Italian cuisine, that is Rice and Cheese.

Boiled Rice is cooked in Spinach Puree and served with Cheesy White Sauce in exotic Vegetables. It can’t get any better!!

Ingredients:
I. For Vegetable Paprika:
– 2 tbsp. Butter
– 1 tbsp. Garlic (finely chopped)
– 2 cups Exotic Vegetables
(Bell Peppers, Broccoli, Zucchini)
– 2 cups Milk
– 1 1/2 tbsp. Corn Flour
– 1 tbsp. Chilli Flakes
– 1/8 tsp. Black Pepper Powder
– Salt to taste
– 1/4 cup Fresh Cream
– 1/4 cup Cheese (grated)

II. For Spinach Rice:
– 1 tbsp. Butter
– 1/2 cup Spinach (pureed)
– 1/2 tsp. Chilli Flakes
– 1 tsp. Oregano
– 1/8 tsp. Black Pepper Powder
– Salt to taste
– 2 cups Rice (boiled)

III. For Lettuce Salad:
– 1/2 cup Lettuce Leaves
– 1 tsp. Olive Oil
– 1 tsp. Chilli Flakes
– 1 tsp. Oregano
– Salt to taste

Method:
I. For Vegetable Paprika:
1. In a saucepan add butter and heat.
2. Add garlic and sauté it till the garlic turns little pink.
3. Once the garlic is sautéed, add exotic vegetables and sauté the vegetables for about 2 minutes.
4. While the vegetables are getting sautéed, in a bowl take milk and add corn flour to it and mix them well.
5. Once the vegetables are sautéed, add the milk and corn flour mixture to it and mix well. Boil till it becomes a little thick.
6. Now add chilli flakes, black pepper powder and salt.
Note: Add little less salt as cheese also contains salt in it.
7. Now add fresh cream and grated cheese and mix everything well.
8. Your Vegetable Paprika is ready. Remove it in a bowl and keep aside.

II. For Spinach Rice:
1. In a saucepan add butter and heat.
2. Add spinach (pureed) and mix well.
3. Now add chilli flakes, oregano and black pepper powder and mix well.
4. Now add salt and mix well again.
Note: Add little less salt as boiled rice also contains salt in it.
5. Now add boiled rice and mix everything well.
6. Your Spinach Rice is ready. Remove it in a bowl and keep aside.

III. For Lettuce Salad:
1. In a bowl take a lettuce leaves.
2. Add olive oil, chilli flakes, oregano and salt and mix everything well.
3. Your Lettuce Salad is ready. Keep it aside.

IV. For Spinach Rice in Vegetable Paprika:
1. Take some rice in a bowl and empty it in the center of the plate.
2. Spread Vegetable Paprika evenly on the sides of the Spinach Rice.
3. Add Lettuce Salad on the top of the Spinach Rice.
4. Your Spinach Rice in Vegetable Paprika is ready to eat.
