Mozzarella en Carrozza (Mozzarella in a Crust)
Ingredients:
1 Ball fresh mozzarella ( will make 3-4 sandwiches)
Sliced white bread with crust removed, 2 slices per sandwich
1 cup plain flour 2 cups Italian Breadcrumbs, Panko breadcrumbs can be substituted.
3 Eggs beaten well and seasoned with salt and pepper.
4-cups vegetable oil for frying
Preparation:
Slice mozzarella cheese and pat slices dry with paper towel
Sprinkle cheese slices with parmesan cheese and salt and pepper
Place cheese between two slices of bread and gently press together
Coat sandwiches with flour and shake off excess
Dip sandwich in egg wash carefully holding the sandwich and drain
Carefully place sandwiches in hot oil and fry on both sides until golden
Oil should be around 350 degrees, which is a normal frying temperature
Watch your sandwiches as they brown, should take a few minutes per side
Have some marinara handy for dipping sandwiches.
