Ingredients:
200 gr eggplant
200 gr sweet pepper
70 g sweet red onion
5 gr chili pepper
1 teaspoon dry Italian herbs
2 cloves of garlic
0.5 teaspoon salt
3 tbsp. tablespoons of olive oil
1 tablespoon lemon juice

Cooking method:
Cut the eggplants, salt and leave for 15 minutes.
Chop chili and bell pepper, add to eggplant.
Then add the Italian herbs, olive oil and stir.
Grease a preheated frying pan with olive oil, put the mixture of vegetables and bake for 20-30 minutes in an oven preheated to 180 α΅’C.
Finely chop the garlic, chop the onion into slices. Remove vegetables from the oven, transfer to a convenient container, add garlic, onion and lemon juice. Mixing. Let stand 15 minutes. It turns out very tasty, moderately spicy.
