This keto version is as good as the original one since It has the same sweetness, it is silky and it is light, perfect to top over some strawberries, a cake (my husband mum make it for the pandoro cake at Christmas!), or to eat by itself. My husband love to bath the cookies on this cream for breakfast, in Italy everyone goes nuts for mascarpone cream.

INGREDIENTS
5 or 6 strawberries (approx. 60 gr)
1 egg at room temperature
2 tablespoons of mascarpone (approx. 57 gr)
1 tablespoon of erythritol (approx. 17 g)
1/8 teaspoon of rum essence
