Learn how to make Carbonara pasta in a right way! Easy and quick recipe to cook at home.

SPAGHETTI ALLA CARBONARA
Serves: 2 people
Time: 10 min

Ingredients:
160 gr Spaghettoni or spaghetti
150 gr Guanciale or Pancetta or Bacon
50 gr Parmesan or Grana Padano Cheese
50 gr Pecorino Romano or any Pecorino Cheese
2 whole eggs
1 egg yolk
30 gr white wine (optional)
black pepper
salt

Procedures:
Step 1
Remove the rind from the bacon & cut it first into slices & then into strips about 1cm thick. Grate both cheeses.
Step 2
Mix altogether with a hand whisk 2 whole eggs, 1 egg yolk, grated Grana Padano & Pecorino Cheese seasoned with black pepper.
Step 3
Dip the spaghetti into boiling water.
Step 4
Meanwhile start to roast the pieces of guanciale in a pan for about 5-6 minutes over medium heat, be careful not to burn it otherwise it will release a too strong aroma! Remove part of the guanciale & keep aside for garnishing, then add the white wine & leave until evaporated & created a creamy sauce.
Step 5
Add a tablespoon of cooking water into a pan to dilute the mixture & drain the pasta al dente directly into the pan with the guanciale & sauté briefly to add flavor. Remove from heat & pour the egg, parmesan & pecorino mixture into the pan. Stir quickly to mix. To make it very creamy, if needed, you can add a little cooking water from the pasta.
Serve the spaghetti alla carbonara immediately, flavoring them with the Pecorino & ground black pepper to taste. Garnish with pecorino cheese & crispy guanciale.
