Here is the recipe for the Grouper my wife made!
Makes: 2 servings
Ingredients
Grouper – 2 pieces
1/4 cup Flour
1/2 teaspoon Smoked Paprika
1/2 teaspoon Italian Seasoning
1 tbsp olive oil
2 tbsps Butter
1 shallot, finely diced
1/2 cup White Wine
1 bag fresh Spinach
salt & pepper, to taste
Lemon Juice
Directions
1. Sprinkle flour on a plate, stir in smoked paprika, Italian seasonings and salt and pepper to taste. Dredge grouper in flour mixture.
2. Place butter and olive oil in a saute pan over medium heat.
3. When the pan is hot and bubbling, add the Grouper.
4. Saute for a few minutes on each side.
5. Remove fish from pan and set aside, covered with foil to keep warm.
6. Add the shallot and white wine to pan and simmer for a few minutes.
7. Add the fresh spinach and saute over medium-high heat until the spinach is limp.
8. Season with a little salt and pepper.
9. Place spinach on plates and top with fish.
10. Spoon sauce over fish.
11. Squeeze fresh lemon on top and serve immediately.
