Pav Bhaji bruschetta is a fusion cuisine that combines elements of different culinary traditions (Italian + Indian). Pav bhaji is a delicious Indian Meal/ snack. Here i turn it into a bruschetta loaded with mozzarella, bread slices and the spicy bhaji ! Its the perfect way to welcome friends this monsoon.  

Prep time – 10-15 mins
Cook time -30 mins
Serve – 4 adults
Level of cooking – Easy

Ingredients for bhaji-

*2 cup boiled veggies
*1 cup onion,garlic and green chilli paste
*1 cup tomato purée
*1/2 tsp turmeric powder
*1 tsp coriander powder
*1 tsp red chilli powder
*1 tsp Pav bhaji masala
*Salt to taste
*1/4 tsp asafoetida/ hing
*1/2 tsp jeera / cumin seeds
*3 tbs oil
*2 tbs butter

Veggies I used:
*2 cups cauliflower
* 1/2 cup beans
* 1 carrots
* 3 cup bell pepper
* 1 cup potatoes
* 1/2 cup peas
* 2 medium size tomatoes
*1 cup water

METHOD

Prepare Bhaji-

* Add all the veggies to pressure cooker and add water.
* Pressure cook veggies till 2-3 whistles or until veggies become soft and mushy.
*Heat oil in a kadhai and butter and let it melt.
*Now add cumin seeds and asafoetida .
*Now add onion ,garlic and chilli paste and cover and cook until it becomes golden .
*Lets add tomato purée .
*Now let’s add turmeric ,coriander and red chilli powder and salt and cook for 2-3 minutes.
*At this stage add pav bhaji masala and cook for a while.
*Time to add our boiled veggies and mash them.
*Add water and adjust consistency of bhaji and let it cook for another 4-5 minutes.
*Now our bhaji is ready , garnish it with some butter and coriander leaves.

Ingredients for Bruschetta-

*Italian bread slices
*2tbs garlic butter
*1 cup grated cheese (mozzarella)
*1 cup prepared bhaji
*1/4 cup chopped green bell pepper
*Baking tray

METHOD

Prepare Bruschetta-

* Apply garlic butter to each bread slice.
*Now spread prepared bhaji on each slice.
* Add grated cheese on it (I have used mozzarella).
* Add some chopped green bell pepper.
* Place them in a baking tray and bake until cheese melts.
* Our Pav Bhaji Bruschetta is ready to serve.
*Garnish with some finely chopped tomato and coriander leaves.
*Serve hot with tomato ketchup.
