Recipe/Ingredients
🍆2 firm Eggplants
1 Tbsp salt ***for soaking
1 Tbsp Parley
1 tsp salt
1 tsp black pepper
1 1/2 cups flour
1 cup Peanut oil for frying

🥚3 beaten eggs
1 Tbsp of parsley
1 tsp black pepper
**Wash the eggplants and cut length-wise into slices not thicker than 1/4 inch.
Sprinkle the eggplant with salt and let it stand for 5 to 10 minutes. Wash salt off eggplant and squeeze liquid out of slices. Pour flour in a bowl, add black pepper, salt, parsley and mix. Beat eggs and add parsley and black pepper. Dredge in the flour mix, then in the egg mixture.
In a large pan heat some oil, fry the eggplants, when browned, drain on the paper towel.
