Today we prepare an early-medieval dish called afrutum in Greek or spumeum in Latin.
Anthimus, the author of this recipe, was a Byzantine physician who lived in the 6th century and worked at the court of the Franks. His short treatise of dietetics is one of the few Latin sources for early-medieval cooking.
