Italian Pocket Paratha
Serves: 3
Preparation Time: 20 Minutes
Cooking Time: 20 Minutes

Ingredients:
For the Dough:
• ¾ Cup Wheat Flour
• ¾ Cup Maida
• Salt

For the Filling:
• 2 Finely Chopped Onions
• 1 Finely Chopped Red Bell Pepper
• 1 Finely Chopped Yellow Bell Pepper
• 1 Finely Chopped Capsicum
• ½ Cup Finely Chopped Olives
• ½ Cup Grated Parmesan Cheese
• 1 Cube Cream Cheese
• 1 Tbsp Oregano Leaves
• 1 Tbsp Mixed Herbs
• 1 Tsp Red Chilli Flakes
• 1 Tsp Pepper Powder
• Salt

Method:
Knead a medium soft dough with wheat flour, maida , salt and water and let it rest for 15 minutes.
Now, for the filling, in a bowl add onions, red and yellow bell peppers, capsicum, olives, parmesan cheese, cream cheese, oregano, mixed herbs, pepper powder, red chilli flakes, salt and mix well. Next, re-knead the wheat flour dough then divide this into the equal portions, now take the first portion and with the help of oil roll this portion into a thin sheet. Next, add in the filling into the sheet then close the sheet and make it into Pocket Paratha using Wheat Flour Slurry. Next, make a pocket shape (as shown in the video) then dry roast in the pan initially, after that add oil/ butter and pan fry the Pocket Paratha on both side. Do the same with remaining Portion and your Pocket Paratha is ready to serve.
