Today we prepare together the coffee semifreddo according to the Italian pastry tradition. This very fresh dessert consists of a coffee syrup, a custard cream, Italian-style meringue and semi-mooned cream.
Coffee Semifreddo, a fresh and tasty creamy summer dessert to be served at the end of a meal or for any refreshing break.

Semifreddo ingredients:
150 gr of coffee syrup
100 of custard
240 gr of Italian meringue
500 ml whipped cream

Ingredients for coffee syrup:
100 ml of restricted espresso coffee
40 gr of caster sugar
8 gr of instant coffee
9 gr of glucose

Ingredients for the custard:
1 yolk (20 gr)
20 gr of caster sugar
7 g of corn or rice starch
80 ml of fresh milk

Ingredients for the Italian meringue:
200 gr of caster sugar
125 ml of water
3 egg whites (100 gr)
