In this video I show you how to make a classic shape called ‘Sorpresina’ literally translated as ‘little surprise’. This was a shape that was used when the meat filling of Tortellini pasta wasn’t available. Tortellini are the iconic pasta shape found in Bologna in Italy and traditionally served in broth. They were usually only eaten on feast days and so often, women wanted to serve the delightful shape, without having the filling and so Sorpresine were born!

I made them with a classic egg pasta dough – so 1 medium egg to 100g 00 flour and I kneaded and rolled the pasta by hand with a rolling pin.

It’s also a great shape to make to eat with sauces that the pasta can pick up – so juicy meat, fish or vegetable sauces with small pieces that can dive into all those little cavities! These are also much-loved by children and adults alike.
