Indo-Italian Cheese Pasta

Method:
Boil water, add 1/2 tsp salt and 1 tsp olive oil (to avoid sticking). Once water starts boiling add dried pasta and cook for 10 minutes. Strain the water, and pour cold water on boiled pasta to avoid over cooking.
In a pan, heat 3 tsp olive oil. Add 2 tsp finely chopped garlic, saute. Add finely chopped onion, 1/2 cup finely chopped carrots, 1/2 cup finely chopped capsicum, 3 whole tomatoes pureed. Add 1 tsp cumin powder, 1 tsp red chilli powder, 1/2 oregano, 1/2 tsp basil, 1/4 tsp pepper powder, salt to taste and cook till oil separates. Add cooked pasta. Mix well. (Medium flame) Cover the lid and cook for 1 minute. Add generous amount of shredded cheese ( Mozzarella / Cheddar)
Sprinkle red chilli flakes, oregano, basil and olives. Close the lid and allow to cook for 3 minutes on low flame till cheese melts.
Serve hot.
