In our latest installment of TSTBU Travels to Italy, on The Style That Binds Us Show, our Italian friend teaches us to make espresso & biscotti! YUM!
In Italy, you’d call what Americans call biscotti, “cantuccini.” Biscotti is the general word for cookie in Italian.
Ingredients:
2 1/4 cups of white flour
1 cup sugar
2 whole eggs
1 cup whole roasted almonds (or be creative and put whatever you find in the pantry. You could use whole hazelnuts, whole almonds, chocolate chips, cranberries, etc.)
1 teaspoon of vanilla extract
1 teaspoon of baking powder
Zest of 1 lemon
1 table spoon of olive oil
Put all the wet ingredients in one bowl and add the sugar. Whisk well. Add in flour, baking soda and lemon zest. Make a dough with your hands, then add the whole roasted almonds. Make a log about two centimeters wide and cook in the oven at 400 degrees F until is golden/brown (about 30 min). Remove your log from the oven, let it cool for 5 minutes and then cut your cookies with a bread knife. The cookie should be about 1 cm wide. These cookies will stay fresh for about 2 months if properly stored.
