Syd’s Italian Pork sausage
(4lbs recipe of 1 lb fat to 3lbs of meat/muscle )
1 tsp onion powder
4tsp dried basil
4tsp granulated garlic
1tsp ground cardamom
1-2tsp dried oregano
1-2tsp dried thyme
1tsp ground fennel seed
1/2tsp ground aniseed
1tsp brown sugar ( optional)
2 1/2 tsp paprika
2tsp ground black pepper
1tbsp salt
4tbsp red wine or balsamic vinegar
1/2 cup of cheap red wine

Directions :
Combine ingredients into a bowl and let sit while you grind the meat . Mix throughly and package to freeze or cook .
