Prosecco comes from the Veneto Region (north east of Italy): using the local grape Glera, the winemaker makes a second fermentation in steel for a short period. This method is called “Charmat”, very different from the french method used for Champagne because in this case the wine has a second fermentation in the bottle for a very long period.
