This rustic, chicken and vegetable “hunters stew” make a great weeknight meal. Wine, chicken stock, and canned tomatoes make the bulk of the stew that is enhanced with salty capers, earthy oregano, and bright basil to give the dish a bit of balance and complexity. Top the finished dish with some parmesan, and dig in!
