Italian Cornish Hen Laid on Italian Rice
2-4 Cornish hens-4 slices of bacon
1/2 of lemon, 2 whole carrots, cut into big pieces, 2celery stalks, cut into big pieces
2 large onions, quartered
8-10 Potatoes Cut into quarters
10-12 fresh sprigs of rosemary
6 sprigs of fresh thyme, 6 sprigs of fresh sage
Olive oil
Salt, red/black pepper/garlic powder/paprika
1 cup or enough to cover bottom of roasting pan of red wine or chicken broth
1 3/4 cups of Chicken Broth, 1 teaspoon Italian seasoning, crushed 3/4 cup uncooked long-grain white rice 1 cup chopped fresh spinach 1/2 cup grated Parmesan cheese.
