Can’t find a tasty dressing for your favourite salad? You just did! Try this HOMEMADE ITALIAN DRESSING!
Last summer I had friends up for a weekend at the cottage. I was in the middle of pulling together salad fixings when one of them opened the door to the fridge and asked “where are your dressings?” You should have seen the look on his face when I replied, “You haven’t made it for me yet!”
Making a tasty, memorable dressing doesn’t have to be complicated endeavour; in fact, we strive to keep all of our dressings super simple. The only thing they have to be is delicious.
Here’s why our HOMEMADE ITALIAN DRESSING always delivers:
THE LIST
Looking at the photo of the ingredients you’ll need to make this should bring a smile to your face. We’re hoping you’re like us and already have everything on hand. We like a robust-flavoured dressing, but if you’re more into subtle flavours, dial back the quantity of garlic and dry mustard by half. It will still be wonderful.
OIL AND VINEGAR
One of the secrets to a good dressing is getting the ratio of oil to vinegar right. We find 2:1 oil to vinegar works like a charm. We also think using a high quality extra virgin olive oil and red wine vinegar also helps. You’ll often find superior brands of each at a favourite specialty food store.
Easy to make and flavourful too, this HOMEMADE ITALIAN DRESSING is primo!
INGREDIENTS
½ cup of extra virgin olive oil
4 tablespoons of red wine vinegar
2 cloves of garlic, finely chopped
2 teaspoons of dry mustard
1 teaspoon of dried oregano
1 teaspoon of dried thyme
1 teaspoon of kosher salt
1 teaspoon of black pepper
INSTRUCTIONS
1) Place everything into a storage jar or container. Secure the lid tightly.
2) Shake vigorously until all of the ingredients are well combined.
3) Store in an airtight container for up to two weeks, shaking well before each use.
