My favorite homemade recipes, typical of my region “Lazio”, particularly of Rome. This is a summer dish, they’re gorgeous eaten at room temperature (even cold from the fridge), that’s the reason why they can be packed as an outdoor lunch at the beach

Ingredients for 4 people:

♥ 4 large or 8/9 little red tomatoes, (are fine Ramati)
♥ 1 tbsp of rice for each tomato
♥ 1 kg (2,2lb) (35,2oz) of potatoes
♥ 1 fistful of fresh basil and parsley leaves
♥ a sprig of mint
♥ 1 clove of fresh garlic
♥ sea salt
♥ olive oil
