Family day at Lake Como in Montana. This lake is one of our favorites, and is accessible to the Bitterroot Valley. Also, Jenny makes one of our favorite summer meals– Italian Panzanella– in our van kitchen.
PANZANELLA RECIPE:
– Crusty Bread, in bite-sized cubes (1 baguette or equivalent)
– 2 Tablespoons Butter
– 3 medium tomatoes
– Fresh Mozzarella (16 oz)
– 3/4 cup chopped Basil or 1-2 cups Arugula
– Olive Oil (a scant 1/8 cup)
– Balsamic Vinegar
– Cracked Fresh Pepper
– Garlic (1 large clove or 2 small)
Melt butter over medium heat and toast bread cubes until golden brown. Cube tomatoes and mozzarella and toss with toasted bread. Drizzle olive oil and balsamic over top, and toss with crushed garlic and cracked pepper.
Note: All proportions are flexible and to taste!
