Whether I have guests over for cocktails and I need to cook up a snack as an accompaniment, or the kids are peckish in the evenings after their play time and I need to put a little something on the table for them, this pizza flavoured tikki is always a hot favourite. I lean towards different kinds of patties and tikkis as snacks cos they are healthier than the traditional fried stuff, while being just as varied and satisfying. These fusion flavoured Italian tikkis taste amazing, particularly when eaten a little hot because the cheese melts inside and oozes out with every bite. The filling gives it a taste of pizza but in a potato shell. Do give it a try. It really is delectable.
Makes 7-8 tikkis of 2 1/2 ” each.
Ingredients:
3 large potatoes,
1 tbsp cornflour,
3-4 tbsp bread crumbs,
3/4 tbsp Italian seasoning,
3-4 green chillies,
Salt to taste.
Method: Boil the potatoes, once cool keep it refrigerated overnight or a few hours. Take them out and grate and add in rest of the ingredients. Mix until well incorporated. Keep it back in the refrigerator for at least half an hour.
Ingredients for the filling:
1/2 cup bread crumbs,
1/2 tsp Italian seasoning,
Pinch of salt,
1 clove garlic.
4 tbsp pizza sauce,
1/4 cup each of corn , capsicum and onion,
6 tbsp shredded mozzarella.
Oil for shallow frying or cooking on the tawa.
Method: Take out the potato filling from the refrigerator. Make small balls and then flatten it into a disc. Spread a little pizza sauce and then the veggies and a bit of mozzarella. Close it up and flatten it a little like a patty. If shallow frying then roll in bread crumbs and keep aside else just flatten and keep aside.Keep refrigerated for 1/2 hour or until you are ready to grill and serve. Heat little oil in a pan and shallow fry and then flip and cook on the other side too. If on tawa then cook with little oil and then flip and cook. Serve hot.
