Hey guys! This episode I’m sharing a super easy no heat dinner and desert. Perfect for hot summer evenings. No heat required! We’ll be making Italian Sub Sandwiches and a gluten free/low carb variation and also a no bake Tiramisu dessert.

Ok, so you’ll want to make the dessert first to have it chilling in the fridge. You’ll want to blend 2 blocks of cream cheese, 3/4 cup of sugar and a tsp of vanilla extract, blend until mixed and soft.

In a separate bowl blend 1 and 1/2 cups of heavy whipping cream. Whip until soft peaks are formed and then blend that into the cream cheese mixture.

Then, you want to have a package of store bought ladyfingers. I used a gluten free version. Dunk the ladyfinger into strong brewed cooled coffee. Dunk quickly and put the dunked ladyfingers in a casserole dish or glass.

Layer half the cream cheese mixture and repeat with the remaining ladyfingers and remaining cream cheese mixture.

Dust the top with cocoa powder and place in the fridge.

Next we will move on to making our subs. So, we’re using store bought Italian bread loaves. You want to cut the bread but not all the way through.

Layer ham, pepperoni, salami, provolone cheese and an assortment of toppings. We used sliced tomatoes and chopped lettuce. We also added black olives, sliced red onion, roasted red bell peppers and banana peppers.

Next we added a sub dressing that we made.

You want to add into a dish or mason jar a chopped clove of garlic, 1/2 cup of red wine vinegar, 1/4 cups of olive oil and a tsp of dried oregano and a tsp each of salt and pepper. Give it a shake or stir and spoon over you’re sub and you’re ready to eat!

I also want to share for anyone avoiding bread you can turn this into a salad! Simply layer chopped lettuce on a plate and put all the same topping and add to he e sub dressing. I like to top the salad with some grated Parmesan also!
