Zeppole are a simple, southern Italian sweet. Similar to donuts, these fried little balls of joy are filled with sultanas and rolled in sugar.
This simplified version of zeppole uses my mum’s own recipe – instead of using a yeasted dough, these babies are made with self-raising flour, which cuts the prep time by a ton.
You’ll need:
2 cups of self-raising flour
1 cup of sultanas
1 tablespoon of candied orange peel
1 tablespoon of orange zest (optional, but recommended)
1 tablespoon of vegetable oil
Juice of one orange
~400 mls of water (but likely less)
Mix all of the ingredients together, adding the water bit by bit till you get a batter resembling that of pancakes.
Dollop spoonfuls of the batter into a pan of hot oil over medium heat, and fry until golden brown and delish.
Remove with a mesh strainer, and roll in sugar while the balls are still hot.
Then…eat!
