Coffee Panna Cotta is the kind of fresh dessert you need during hot summer days when you don’t want to turn on the oven.

I love panna cotta, but my favorite one is coffee panna cotta, made with strong espresso shots. This famous Italian dessert was born in the mid of the 20th century, in Piedmont, Northern Italy. In 2001, Piedmont Region has included Panna cotta on the list of traditional foods of the region.
For this fantastic dessert, you don’t need to be an expert at all since it contains just a few ingredients and you have nothing to bake. Oh, yes, you just need a bit of patience until your panna cotta will be ready.

Ingredients:

espresso coffee 140ml.
heavy cream 400ml.
sugar 85g.
seeds of one vanilla bean
gelatin sheets 8g.
optional: crumbled Lotus (or similar) biscuits 8 pieces

Instructions:

1. Prepare your strong espresso coffee.
2. Pour the milk and cream into a saucepan with the sugar and vanilla seeds. Stir and bring to a simmer, then remove from the heat.
3. Add the coffee and stir.
4. Take the gelatine out of the cold water (soaked for 10 minutes) and squeeze out the excess, then add to the heavy cream mixture. Stir until completely dissolved.
5. Pour your coffee panna cotta in small glasses and let to rest in the fridge for at least 4 hours or overnight.
6. Optional: crumble some biscuits and add them in your panna cotta glasses to give it a different texture.
