Straight from Firenze, when all you’ve got was a piece of meet and bottle of red wine – Peposo was born. This traditional Tuscan beef stew was slowly cooked in red wine by the citys construction workers from early morning to lunch time. The meat gets so juicy and soft bubbling in the red wine with black pepper, the result is just amazing. For a starter top everything on a crispy bruschetta or serve the stew with polenta for lunch or dinner.
What you need for 4 starters
– 600g beef stew meet
– 4 cloves garlic
– 1-2 table spoon whole black peppers
– Half liter red wine (by the tradition use wine from Tuscany)
– A bit of salt
– Fresh bread
– Pinch of parsley
How to:
1. Cut the meet in chunks, the size does not matter so much just that they are the same size.
2. Clean the garlic and mix the whole cloves in a bowl with the meat, pepper and a pinch of salt.
3. Pour in the red wine and let marinate for 1 hour.
4. Place the mix on a pot (ceramic in you have one), and let it boil. After turn the heat low and let simmer for 3 hours.
5. Prepare the bruschetta, cut the bread in pieces and fry them on a pan (grill pan if you have one).
6. Place the ready and soft meet stew on top of the crispy bruschetta and top with a bit of parsley.
