ORGANIC RIGATONI WITH CHEESE AND PINE NUTS
Serves 4:
Ingredients:
– 400g of organic rigatoni
– 150g of erborinato blue cheese
– 150g of ricotta mustia
– Pine nuts (to taste)
– Fresh parsley (to taste)
– Fruity extra virgin olive oil (to taste)
– Sea salt (to taste)
– Black pepper (to taste)
Method:
Bring 4 litres of salted water to boil
Cook the pasta for 8 minutes
Stir a couple of times throughout cooking
Put the ricotta mustia and erborinato into a non-stick pan
Gently crush the cheese with the back of a spoon
Add 4 or 5 large spoons of the pasta cooking water
Stir well to obtain a creamy mix
Drain the pasta and add it to the sauce
Stir for 2 miuntes
Add the pine nuts and stir for another 3 minutes
Plate up
Add the fresh parsley
Add the fruity extra virgin olive oil
Finish with black pepper
