This channel, called Nonno Giorgio and Rory cooking Italian for weight loss, is not about weight loss per se but about cooking tasty healthy meals that can also help you lose weight or maintain weight. The intro video number 001 will help you better understand what the channel’s all about and be an introduction to who we are, where we live and how we cook. The rest of the videos will be either recipes that you can follow and make and enjoy or information such as fasting health and so on.

Intro video:

This is a wonderful side dish or main dish you can have with a vegetable like asparagus, or you can have it as a side dish to a pasta dish. Scallops are tasty and when they’re crunchy and crispy brown like in this recipe they are fantastic enjoy!Scallops are a favorite dish in Italy and prepared in many different ways.


Ingredients

6 to 8 medium sized scallops
1/4 cup white wine
1 Tbsp vegetable oil
Salt and black pepper to taste

Optional: red pepper flakes


Directions

Completely defrost scallops if frozen
Wash thoroughly each scallop squeezing slightly to get as much of the water out as possible.
Place a double layer of paper towels on a large plate and place each scallop onto the paper towels
Put some salt on the scallops to bring out as much moisture as possible
Place another double layer of paper towels on top of the scallops
Place another same size dish on top of the scallops and a heavy object on the dish to squeeze the juice out
Let it sit for about 5 to 10 minutes
Replace the two paper towels with new ones, place the scallops back on the first layer and cover again with paper towels, place the second plate and the weight on top and let it sit for another 10 minutes
When scallops are completely dry and the paper towels are be damp but not wet, you’re finished
Now the scallops are ready for searing
Pour some olive oil in a medium size frying pan. Let the pan completely heat up till it’s hot
Place each scallop in the pan until it’s seared
Don’t disturb the scallops for 2 to 4 minutes depending on size
When the scallops are completely seared and brown, flip them over and do the same with the other side. Add some white wine for moisture and taste.
Plate your scallops and enjoy
