This channel, called Nonno Giorgio and Rory cooking Italian for weight loss, is not about weight loss per se but about cooking tasty healthy meals that can also help you lose weight or maintain weight. Recipe: Risotto Milanese
This is a rich and delicious Northern Italian dish. The saffron turns the rice into a golden color. The result is creamy but there’s no cream and I do not use any butter in the dish. The creaminess comes from the rice itself. This is a dish you can serve the family and friends and it will impress them. The recipe is simple, but requires attention and care. As the name indicates, this recipe is from Milan, Italy.

Ingredients:

– 1 onion chopped
– 1/4 cup olive oil
– 2 1/2 cups rice Italian Arborio ONLY
– 1 teaspoon threads of saffron
– 1/2 cup white wine
– 4 lbs. vegetable broth
– 4 pinches salt to taste
– 4 pinches pepper to taste
– 3 tablespoons butter optional
– 1/4 cup Parmesan cheese grated
– OPTIONAL
– 1 cup fresh lemon juice
– baby broccoli rabe blanched and cut into small cubes
– asparagus spears blanched and cut into small cubes

Directions:

1. Sweat onions in olive oil until translucent
2. Add rice and toast – 2 mins
3. Add white wine – Rice will sizzle
4. In a small bowl, add saffron to some hot broth. When golden add to risotto
5. Reduce by 1/2 over medium heat, about 15 mins stirring constantly
6. Add 1/2 cup stock at a time and stir constantly until almost absorbed
7. Cook 15 to 18 mins until al dente
8. Adjust seasoning to taste.
9. Remove from heat and vigorously stir in butter and Parmesan cheese. Serve hot
10. Prep: 35 min
11. Notes: YOU MUST STAY WITH THIS DISH & STIR CONSTANTLY! If it dries out throw it away. Serve immediately – it will NOT wait for people. Serve with wine & bread. Can add scallops, shrimp, asparagus, clams, mussels, etc. at end.
