Good morning all!

A couple of days ago, Smokey’s (Kevin’s) mom was making Swedish Meatballs. We thought….how awesome would it be to have low-carb meatballs for dinner? We haven’t purchased hamburger for awhile, since prices have doubled in our area. However, we always have some frozen ground turkey in our freezer. How difficult would it be?

Well, our recipe was NOT difficult at all! Instead of using bread crumbs or Corn Flakes, we use shredded Parmesan Cheese as our filler and thickener, along with a couple of eggs, and other delicious ingredients. And to give our meatballs a little kick, we added just a half of teaspoon of red pepper flakes.

Oh my goodness!!! Our low-carb meatballs were absolutely delicious! And to make our recipe even easier to make, we tossed our ingredients into our slow cooker and cooked for about 8 hours. Easy and yummy!!

This recipe isn’t in our current low-carb cookbook. However, it will probably be in our next edition. 😃
