If you buy regular sardines from fish market do ensure that you can clean and debone them well enough to make this.
We purchased the fillets available via #freshToHome #sardinefillet

Steps :
1. In a big plate or any flat vessel take flour(maida)
2. Add to this oregano, salt and pepper and mix well
3. Coat each sardine fillet in this mixture and keep aside
4. In a pan heat oil
5. Add garlic crushed and let it cook for few seconds
6. Add the coated fillets and cook on medium flame for 1 minute each side

The Italian pan fried sardine fillet is ready to be relished.

Since we are used to have it a bit spicy we added in a little fish redchilli powder to the existing mixture and used it for frying remaining batch of fish.

Tips : If you like the skin to be crispier keep skin side down for 30 seconds more. Adjust salt as per liking and squeeze lemon at the end for enhanced flavour..
