Today we present the most authentic way of making risotto. If you follow these steps, you can easily impress your guests, your family members with a bowl of creamy risotto and showcase your culinary repertoire.

We have used button mushrooms and chicken breast cubes. You can use other types of mushrooms if you fancy and replace chicken breast with chicken thighs. We also finished with some sour cream and truffle oil–this is completely an optional step.
For rice, we have used Vialone Nano. You can use Carnaroli or Arborio, the one that is available for you.

Variations:-
1)Parmesan Risotto— No chicken or mushrooms, start with onions, garlic followed by rice and finish with loads of parmesan cheese
2)Pumpkin Risotto- 50gm of pumpkin cubes per portion instead of chicken and mushrooms.
3)Porcini- Soak dried porcini in hot water for 20 mins and proceed as here. Use the water as well which was used for soaking the mushrooms.
4)Seafood- Any seafood you may want to use. Instead of chicken stock, we’ll have to use fish/seafood stock or bisque if you have. No cheese but finish with some olive oil and basil
5)Artichoke Risotto- Use canned/fresh/frozen artichoke and finish with lemon zest alongwith butter and cream.
