This dish may look complicated but it’s ever so quick and extremely easy to make! I’m doing the keto diet and I absolutely love incorporating this in it!

Ingredients

3-4 lbs of live mussels
1 can of diced tomatoes 796ml
1 bottle of strained tomatoes 660ml
1 C of dry white wine
3-4 lrg cloves of garlic finely chopped
2 tsp of fresh basil sliced thinly
11/2 tsp of oregano
2 tbsp of fresh Italian parsley (flat leaf parsley) chopped – separate and use half for garnish
1/2 chili flakes (optional
1 tsp of black pepper
1/2 tsp of Himalayan salt
1/4 cup of extra virgin olive oil (to cook with)

This dish is delicious on it’s own but we make extra sauce because we love to dip crusty bread into it. There is also enough sauce to pour over PASTA. So if you’ve never had MUSSELS with PASTA IN WINE SAUCE, here’s your chance! Soo good!!
