PREPARATION TIME: 20 mintues

INGREDIENTS (Serves
Penne Pasta 250 gm
Salt 1 tsp
Oil 1 tsp
For Red Sauce Pasta-
Tomato 5 to 6
Oil 2 tbs + 2 tsp
Carrot 1 medium
Capsicum 2 small
Garlic 1 tbs
Onion 1 cup
Kashmiri Mirch 1 tsp
Salt 1 tsp
Fresh Cream 1 cup
Chilli Flakes 1/2 tsp
Oregano 1/2 tsp
Tomato Ketchup 3 tbs
Sugar 1 tsp
Cheese As required
White Sauce Pasta-
Oil 3 tbs
Mushroom 1/2 cup
Carrot 1/2 cup
Capsicum 1/2 cup
Butter 2 tbs
Maida 1.5 tbs
Milk 2 cups
Salt 1 tsp
Black Pepper 1 tsp
Oregano 1/2 tsp
Cheese As required
PROCEDURE:
Boiling the Pasta-
1. Add pasta in 2.5 litres water.
2. Add 1 tsp salt and 1 tsp oil. Stir it and boil on high flame for 5 minutes and then on low flame for 15 minutes.
3. When the pasta is cooked, drain the excess water. Keep the pasta aside.
Red Sauce Pasta-
4. Boil the tomatoes.
5. When it gets boiled, keep the tomatoes aside and let it cool down.
6. Peel the skin and grind it to make the tomato puree.
7. Add 2 tbs oil in a frying pan. Add sliced carrots and diced capsicum. Fry it fro 5 minutes. When fried, keep it aside.
8. Add 2 tsp oil in a frying pan. Add finely chopped garlic. Fry it until golden brown.
9. Add chopped onion. Fry it until light golden brown.
10. Add tomato puree and mix it.
11. Add kashmiri mirch and salt. Mix it well.
12. Add fresh cream, chilli flakes and oregano, and mix it.
13. Add tomato ketchup and sugar. Mix it well.
14. Add the fried veggies and add cheese as required. Mix it.
15. Add 125 gm boiled pasta. Mix it well.
16. Sprinkle oregano and chilli flakes.
White Sauce Pasta-
17. Add 3 tbs oil in a frying pan.
18. Add mushroom, carrots and capsicum. Add salt. Fry it for 5 to 7 minutes and keep it aside.
19. Add butter in a frying pan. Add maida. Keep stirring it to avoid lumps.
20. Add 1.5 cup milk gradually and stir it continuously for 2 to 3 minutes.
21. Add salt, black pepper and oregano. Mix it well.
22. Add cheese as required.
23. Add the fried veggies and 125 gm boiled pasta. Mix it well.
24. Add 1/2 cup milk and mix it. Sprinkle chilli flakes and oregano.
