Bolognese sauce recipe

Ingredients
100 g red onion ( 1 medium size)
100 g celery (2 stalks)
200 g carrots (4 medium small size)
1 kg minced beef
1.2 l bottled tomato passata
100 ml water
2 tbsp olive oil
1/2 tbsp sea salt
15 gr basil
1 garlic clove

Direction
▪︎wash, peel and dice your celery, carrots and red onion keep aside
▪︎peel 1 clove of garlic and keep aside
▪︎take a big pot or pressure cooker and place it onto the stove on medium-high heat, let it warm up for a few seconds and pour inside the olive oil, followed by the garlic, onion and celery, cook till onion starts being translucent, approximately 4 minutes
▪︎ add the carrots and cook all together, remember to stir pretty often at this stage otherwise the vegetables will stick to the bottom and burn, sweat for 5 minutes
▪︎ just before your vegetables start turning brown add the mince and use your wooden spoon to break it down in order to cook evenly with the vegetables, cook for approximately 15 minutes or until almost all the water from the meat is evaporated
▪︎ at this point add the tomato passata sauce and sea salt, mix well close the lead and turn down the heat to low, you want the sauce to simmer not boil
▪︎after about 30 minutes check the bolognese sauce and stir, making sure isn’t sticking to the bottom of the pot and in case it’s needed adjust the heat
▪︎ if you are using a pressure cooker should take you 1 hour to cook instead if using a normal pot should take you 2 hours, depending on what consistency you like, we love our sauce to be rich and thick
▪︎ when your sauce is done cooking add the basil, stir well and use it for your pasta or let it cool down before refrigerate, mind adding the basil is essential to lift up all the flavours a proper Italian secret!
