I did make an instagram post about the homophobia Serena experienced at work in a way that made it clear staying in Italy is toxic for us. If any of you have experienced negativity for who you are, please DM us! Being gay in Italy is not easy at people here tend to be close minded since they are “traditionalists” 🙁 It’s not the first time we experience homophobia unfortunately.
Anyways, this risotto is so delicious!
Ingredients are
1 chopped onion
Olive oil
Zucchini flowers
Saffron
Cooking wine (we used white wine)
Risotto rice
Bouillon powder or cube or store bought broth of choice
Parmesan cheese
In a pan on medium heat put some oil and once it’s heated be sure to add the onions. Once the onions start becoming soft add the rice until they are both clear in color. Slowly add some broth and continually still the rice mix. Once the broth is absorbed keep adding broth until the rice is fully cooked. Once the rice is cooked at the flowers and saffron and stir. Add some parmesan and serve immediately. It’s delicious paired with white wine!
