Chicken in Balsamic Vinegar
Ingredients
1. 6 Chicken Thighs
2. 2 Garlic cloves – crushed
3. ¼ cup Red wine
4. 3 TBSP White wine vinegar
5. 1 TBSP Oil
6. 1 TBSP Butter
7. 6 Shallots
8. 3 TBSP Balsamic vinegar
9. 2 TBSP Thyme
10. Salt and pepper to taste
Method
1. Make slashes in the chicken. Brush with crushed garlic. Place in non-metallic dish. Add wine and white wine vinegar, season with salt and pepper. Cover and marinade in the refrigerator overnight.
2. Drain the chicken and reserve the marinade
3. Heat oil and butter in a skillet. Add shallots and cook for 2-3 minutes until softened
4. Brown chicken pieces reduce heat and half the reserves marinade. Cover and cook for 15 minutes. Add marinade if necessary.
5. Once chicken is tender add the balsamic vinegar and thyme.
