We were quite lucky to get seats to dine at the Central, world number 6th restaurant in 2018 during our time in Lima, Peru.

Central is truly a unique restaurant that focuses on Peru’s ridiculous lack of modern farming in its rural parts, leading to a diversity of heirloom and heritage produce unlike anywhere in the world. Coupled by it’s super diverse landscape of ocean, highlands and amazon forest, Virgilio finds himself with such abundant diversity of undocumented and bounty of ingredients at his disposal.

His restaurant steps up to the task of documenting and bringing to life these native produce to the world. Is it any good? Watch to find out. 🙂
