Serves: 4 people
Method
1. In a pan add 2-3 spoon of olive oil, 3-4 pods of garlic finely chopped,1 onion finely chopped. Cook, add 250 gram pumpkin chopped big, 3-4 cups of water and let the pumpkin boil.
2. Pumpkin should become soft and then blend after it cools down.
3. In another pan add 2-3 spoon of olive oil, 1 onion chopped long and 1 cup risotto rice stir for 2 mins.
4. Add 1 cup water and pumpkin puree mix.
5. Add turmeric and red chili powder for color (optional). Salt and black pepper powder as per taste. Stir.
6. Cook for 20mins or till risotto is cook. Adjust the water for cooking.
7. After risotto is cooked, top with basil and walnuts. Serve Hot
