Eggplant parmigiana and chicken Marsala are my two favorite Italian dishes. This recipe is very clear and easy. Just follow my step by step instructions and you will make this dish like an expert pro.

For ingredients-
3 large eggplants
1/2 Tbsp black pepper
1 cup all-purpose flour
1/2 cup vegetable oil
1 lb. shredded mozzarella cheese
1 cup treated pecorino Romano cheese
1/2 cup parsley chopped
For the sauce-
1/2 cup onion- chopped
5 garlic- chopped
2 quarts tomatoes sauce
1/2 cup basil- chopped
1 1/2 tsp oregano
1/2 tsp each salt and pepper
1 Tbsp salt
To make-
Mix salt in a bowl with water,
Slice eggplants, soak them in salty water, 30 minutes
Transfer to a towel, pat to dry
Transfer flour to a shallow bowl
Coat eggplant slices in flour set aside
Pour oil in a pan, warm to medium heat
Fry eggplants 4-6 minutes on each side
Transfer to colander
Add oil, onions, and garlic to the pot, cook 5 minutes
Add tomatoes sauce
Add basil, oregano, salt, and pepper
Cook sauce to boil for 1 minute, then reduce to simmer for 1 hour, covered.
Pour 1/4 cup sauce in a deep baking pan,
sprinkle 1/4 cup mozzarella,
sprinkle a little Pecorino Romano,
add a layer of eggplant, slices than sprinkle with salt and pepper
Repeat with the second layer
Then add 1/4 cup tomatoes sauce
Sprinkle 1/4 cup mozzarella
Finish up with parmigiana on top.
Cover with foil
Bake at 375 for 50-60 minutes
Serve warm, with fresh chopped parsley on top.
