Penne in Creamy Italian Sauce -30 minutes
Isn’t it nice to know that we can enjoy the comfort food of creamy pasta! Without all of the fats usually associated with cream sauces.
Ingredients
1(16-ounce) box penne pasta
1 can pitted ripe olives
1 cup fat-free sour cream
1(14-ounce) jar pizza sauce
1(14.5-ounce) can Italian diced tomatoes
½ cup low-fat ricotta cheese
1 teaspoon garlic salt
Instructions for entrée:
• Add 3 quarts of water to a large Dutch oven or soup pan. Over high heat bring to a boil.
• Once water is boiling add 1(16-ounce) box penne pasta. Stir occasionally.
• Open and drain 1 can pitted ripe olives. Place drained olives in a microwave safe bowl and heat for 1 minute, set aside.
• Once pasta is cooked, drain and return to pan.
• Stir in 1 cup fat-free sour cream, 1(14-ounce) jar pizza sauce, 1(14.5-ounce) can Italian diced tomatoes, ½ cup low-fat ricotta cheese, 1 teaspoon garlic salt and the heated olives. Return pan to medium heat to warm all ingredients.

Yield: 9 (1 cup) servings
VARIATION:
Omit the black olives.

Instructions to prepare suggested meal
30 minutes before meal
• Pre-heat oven to 425 degrees.
• Add 3 quarts of water to a large Dutch oven or soup pan over high heat. Bring to the boil.
25 minutes before meal
• Begin to make Italian Monkey Bread according to directions.
20 minutes before meal
• Stir the penne pasta into the boiling water.
10 minutes before meal
• Place the Italian Monkey Bread into the pre-heated oven.
• Make the Pepperoni and Green Beans according to directions.
5 minutes before meal
• Drain the pasta and place back into the pan.
• Continue following directions for Penne Pasta
1 minute before meal
• Remove muffins from oven.
• Serve the meal.
