Episode : 2 – Veggie Pasta without sauce and easy garlic bread.
In Today’s video we are going to see two dishes that go well together or can be eaten separately too. Love for Italian food.
1. No sauce veggie Pasta
Ingredients:
Pasta of your choice – 2 cups
Vegetables of your choice (I used zucchini, red bell peppers and spinach) – 1/2 cup of each vegetable.
Garlic – 3 to 4 cloves chopped
Butter – 1/4th of a stick
Pesto sauce (I used store bought vegan pesto sauce) – 1 tbsp
Vegan Mayonnaise – 2 tbsp (or more based on your preference) – any mayonnaise of your choice.
Italian herbs – 1 1/2 tbsp
Red chilli flakes – 1/2 tsp
Salt – according to preference
Olive oil – 1 tsp
Water – to boil 2 cups of pasta
Method:
a. Boil a pot of water. While the water begins to boil, add salt and Olive oil.
b. Once the water is boiling hot, add the pasta and cook for 7 mins. This time is based on quantity. If cooking more quantity adjust time accordingly.
c. Drain a few pastas in a colander ladle/skimmer/strainer and put them in cool water to check if they are done. If the pasta turn white and are soft when touched, then the pastas are cooked perfectly.
d. Drain the water completely from the pasta and set it aside in a bowl.
e. Heat a medium to large sized skillet. Add butter and allow it to melt.
f. Then add chopped garlic and sauté until raw smell of garlic fades off and turns golden brown.
g. Then add the hard veggies first. I added zucchini and red bell peppers. Allow it to cook until tender. Do not over cook them.
h. Next add the pesto sauce and saute it for 2 mins.
i. Then add finely chopped spinach (Spinach can be added as whole leaves too) and few basil leaves and saute until they shrink in size.
j. Now that veggies are cooked, add the spices and herbs. Saute for 1 min. Do not over cook the herbs, they will lose their aroma. Then add salt.
k. It is time to add the pasta. Mix gently just enough for the pasta to get coated with the spices and herbs.
l. Remove the pan from heat and add the mayonnaise. Mix the contents thoroughly.
j. Pasta is ready to be served. Garnish with mozzarella or Parmesan cheese.
2. Garlic Bread
Ingredients:
White bread – 2 slices
Cheese of your choice – 1/4 th cup ( I used mozzarella)
Butter – 1/4th of a stick of butter (room temperature butter)
Garlic – 1 clove finely chopped. It can even be crushed.
Chilli flakes and Italian herbs together – 1/2 tsp
Coriander leaves – leaves from 2 to 3 stems chopped finely
Salt to taste
Method:
a. In a bowl, take less than 1/4th stick of room temperature butter, add garlic, herbs, salt and coriander leaves and give a good mix. If using salted butter, skip the salt.
b. Heat a flat pan/griddle, spread plain butter on one side of a slice and place that side on the pan. Top that slice with cheese of your choice.
c. Then apply the garlic-butter mixture to one side of the second slice. Place that side in such a way that the spread side faces up.
d. Toast both the sides evenly.
e. Take off from the pan and serve with your choice of dip or with pasta.
