Recipe:
For the pastry:
104g unsalted butter, soft
93g white sugar
Pinch of salt
Splash of vanilla
1 egg
208g ap flour
For the filling:
285g white sugar
35g cornstarch
30g ap flour
340g water
20g unsalted butter
Zest from 2 lemons
90g lemon juice
For the meringue:
4 egg whites
200g white sugar
80g water
