It’s finally apple season in the north side of the world, here’s one of my new favourite apple breads. I am currently in Italy in a small town 30 km from Firenze (Florence), called San Giovanni Valdarno. I have been experimenting with apple loaf cakes/ apple bread or to practise my Italian torta di mele. As I love, love, love, cake or pudding with cooked apples, I decided to research Italian apple cakes. After baking a few versions this apple bread (torta di mele) is my new favourite. As I am away on holidays, I don’t have my full range of tins, so I made this in a loaf style pan, but this could also be made in a round tin – increase ingredients for a larger tin eg. 3 eggs, 10% more flour, sugar, butter etc.
