Apple cakes know so many shapes and recipes around the world. And probably it is one of the most popular desserts around the world. Some make apple cakes with vegetable oil, such as a big part of Europe, while in the USA apple cakes are usually made with butter. Some prefer to slice the apples, while others prefer to chop the apple into small cubes. Some add liquors in the apple cake, some love it plain.
There are so many ways to make a delicious apple cake.
One thing I know is that I like it rich, full of apple, so you could actually feel the apple flavor.
I have already shown you how to make a perfect American apple pie from scratch, but now it’s time to see how to make this delicious and moist Apple Pound Cake. It has apple, cinnamon, walnuts and a touch of rum.
What else would you need on a rainy day, while you drink your afternoon tea?
American Apple Pie Recipe:
Ingredients:
softened butter 115g.
sugar 140g.
2 eggs
a pinch of salt
milk 80ml.
lemon juice 2 tablespoons
4 apples (medium size)
cinnamon 2 teaspoons
brown sugar 3 tablespoons
lemon zest (optional)
rum (or vanilla extract) 2 tablespoons
flour 190g.
baking powder 1 teaspoon
corn starch 2 teaspoons (optional)
Instructions:
Peel the apple and cut them into small cubes. Put them in a bowl and add the cinnamon, brown sugar, and rum. Then let to rest.
1. In a large bowl, mix the butter with sugar. Then add the eggs and combine them.
2. Add a pinch of salt, then the milk with lemon juice (you can replace the milk with buttermilk.
3. In a different bowl combine the flour with corn starch and baking powder.
4. Add the flour mix to the rest of the ingredients and combine them well.
5. IMPORTANT: Save 2 tablespoon of the flour mix and add them to the chopped apples. This is a good way to keep the apple pieces in a uniform position and avoid them to sink on the bottom part of the cake.
6. Add 3/4 of the apple quantity and combine, then add a handful of walnuts.
7. Pour the apple cake mixture into a loaf tin and add the rest of the apples on the top. You can also add some other walnuts if you like.
8. Bake the apple pound cake at 180°C, in the preheated oven, for 45-50 minutes.
9. This is a moist cake, so pay attention not to overbake it. You know your oven better than anyone!
